There is something about Italian food that makes everything better. The combinations of gooey cheese, juicy tomatoes, and Italian seasoning are things dreams are made of. We had the opportunity to travel to Italy a few years ago and I will never forget it. I could eat real Italian pizza and gelato for every meal. And for the time that we were there, I did. Being back stateside has put a damper my tastebuds as I have been unable to find any real Italian food since we have been back, so cooking it at home is as close as I can get.  P.S. Spinach RIcotta Sausage Stuffed Shells

These stuffed shells are like little mouth-watering bombs of cheesy goodness. The sausage adds the perfect texture and boost of flavor. I usually make half with and half without sausage, just in case my toddler is being particularly picky. You can substitute with shredded chicken instead, make some yummy Italian meatballs on the side, or omit the meat all together. The beauty of Italian food is that the possibilities and flavor combinations are endless! Get creative!

This Mezzeta Marinara Sauce is one of the best marinara sauces I have ever had. It is SO full of flavor. My favorite is the Whole Garlic and Sweet Basil flavor. The tomatoes are even grown in the rich soils of Italy’s San Marzano region. And the sauce is real you guys. It is all natural with no sugar. Which is important to me when choosing food for my family.

  1. Preheat oven to 350'. Cook the jumbo shells in a large pot, until just soft enough to be able to stuff with filling. Drain and set aside. Brown the Italian sausage over medium heat. Drain and set aside to cool. In the same skillet, cook the spinach until wilted. Grab a large bowl, mix together the ricotta, 8oz shredded mozzarella, 1/2 cup parmesan cheese, 2 eggs, Italian seasoning, and garlic powder. Fold in the cooked spinach. Pour the entire jar of Mezzeta marinara sauce into a 9x13 glass baking dish. Grab the shells and fill each one with the cheese and spinach mixture. Place them into the baking dish, filling side up, as close together as you can. There will be filling and shells leftover. You can make a second smaller batch, or I save the shells for another recipe and spoon the remaining filling on top of the shells for some extra cheesy goodness. Sprinkle the sausage over the top of the shells. Top it all with the remaining shredded mozzarella and parmesan cheese. Cover with foil and bake for 30 minutes, or until the cheese is bubbling. Remove from oven and let cool for 5-10 minutes. Garnish with some fresh basil or dried parsley. Enjoy!
