Toddler Approved English Muffin Mini Pizzas


I don’t know why, but figuring out what to make for lunch everyday since having a toddler, is hard work. Like I have to guess and hope I get it right that she will be in the mood for whatever I am making. I literally cross my fingers as I am walking the plate to her. It is like winning the lottery and you probably won’t ever win but it’s nice to try. One thing I know my toddler will always always always love, are these English Muffin mini pizzas.

What kid doesn’t love pizza? And to make them healthy, I use whole wheat English Muffins and sneak spinach in there so she doesn’t even know she is eating it. If your kid is really picky, you can chop up the spinach or whatever other veggies you want, and hide it in the sauce! Then top it off with all of that yummy cheese and they will never know. Take that little picky dictators.

See all of that Ricotta? mmmm. Adding it is totally optional, but why would you not use Ricotta if you had the choice to?! Take my advice, us the Ricotta. I promise you, that you will be gobbling these up just as quick as your kids will.

Instructions
  1. Preheat oven to 425 degrees. Line a baking sheet with foil. Slice your English Muffins in half. Add a tablespoon of sauce to each English Muffin half. Add spinach (or whatever veggies or toppings you want to sneak in there) Top with Mozzarella cheese. Add some dollops of Ricotta Cheese on top. (optional) Bake for 7-9 minutes, or until cheese is starting to turn golden brown. Serve to your toddler before you eat them all...they are that good!
