Ever since going more natural last year, eating clean has been number one on my list of priorities. We eat mostly fruits, vegetables, and try to stay as far away from long lists of processed ingredients. This is obviously very difficult with a toddler, so when I saw these Garden Lites muffins at Publix recently, I couldn’t pass them up. Especially since the first thing on the ingredients list is vegetables. Score!
I was skeptical at first. I have made several baked goods with vegetables and only had two of them come out tasting delicious, so when we bit into these muffins I wasn’t expecting much. You guys, they taste so good. My toddler at two of the chocolate ones this morning and has been asking for them as a snack before bed….33% of them are zucchini and carrots. She would have never eaten that many of those vegetables on their own. These muffins are also gluten, dairy, and nut free.
Garden Lites muffins are also great as they are stored in the freezer and packed individually, so you can grab and thaw on the go! I throw them in my bag before park dates, running errands, and long car rides. They’re also great warmed up with some milk for a bedtime snack. A perfect way to sneak in some more vegetables any time of day.
I found these Garden Lite muffins at my local Publix store. You can find them in the freezer section of your nearest Publix, Stop & Shop, Giant, Shop-Rite, HEB, Kroger, or Costco. There are a large variety of flavors, so you are sure to find ones that every member of your family will love. I challenge you to go out and try them, and see for yourselves how great these taste.
